Pekalongan city has two fish auction markets which are important for trading fishery products ranging from Masalembo, Matasiri, Bawean to Southern China seas. With respect to such distant service are of catchment many fishermen have procced around forty per cent of their catch into dried products and the rest is cooled down with ice during 20 -40 days of fishing period. That is why it is necessary to increase the quality of fishery products caught in response to the downgrading effects of the recent processing method to their added value in the markets. This research was undertaken during 2006 to investigate the comparative results of the variety processing methods in three adjacent fish products, Pekalongan, Brebes and Cirebon. The findings demonstrate that Pekalongan’s fishery product might be improved to result in derivative products such as khitosan, tersai and kerupuk. In the end such efforts may contribute to the increase of job creation and income generation.
